I’ve been geeking out over my lunchboxes lately and thought it was a pity that no one got to see it (other than some unwilling coworkers, but they weren’t the accurate level of impressed that I would like them to be).So under the
incorrect impression that my blog friends would express their awe more, here are some photos of my favorite homemade lunches.
Also, lately, a blood screening told me it’s likely I have Celiac’s Disease… so Gluten-free from now on
Spinach Tomato Tortellini
Someone on my newsfeed made this the other day and spawned such a heavy craving for me. Recipe can be found here.
Braised Balsamic Chicken with Sautéed Garlic Spinach
This kept popping up as one of the more popular suggestions on my favorite recipe database and since I had some leftover diced tomatoes in a can, I decided to go for it! Recipe here for the chicken.
Ginger Glazed Mahi Mahi
No, that is not me burning the shit out of my mahi mahi filets, it’s actually a ginger glaze that tastes EXACTLY like what every Japanese Eel Rice dish tastes like. If you don’t know what that is, it’s basically heaven. Definitely going to use the glaze recipe more often, even if it’s not with the fish! This is after I went gluten-free. Side dishes include mushroom risotto and roasted brussel sprouts (not perfected yet). The whole meal took about 1.5 hours to prepare, cooking all dishes simultaneously.
